Sow in early spring or late summer, as spinach grows best in cooler weather

Allow plants to brown and dry once all leaves have been harvested

Identify the plants with small green balls (those will yellow balls will not produce viable seeds)

4-6 weeks after the last leaves have been harvested, and the plant is dry, remove the plant and hang upside down for a week

Once plants are fully dry, use your thumb to loosen seeds from the stalk, allowing them to collect in a paper bag (gloves are recommended)

Seeds should be stored in a cool, dry place and are viable for 2-3 years
